Taco Everyday

I'm a big Fredericksburg, Texas food and restaurant critic and these are my new favorite! They are from the Bejas Roadside food truck.

Asian Lettuce Wraps

I've been playing with Vine and created this. Unfortunately, my video got lost on vine but it still was saved on my phone. To make these, I added hamburger meat, onion, fresh ginger and garlic, asian spices and Bragg Liquid Aminos. Served with Iceberg Lettuce for a lot of crunch. If I weren't dieting I would add a hint of sweetness, maybe a touch of peanut sauce!

Spicy Shrimp Concoction

This is probably my favorite thing to eat right now because its low-cal and okay for my diet. I love stir fry but can't do the oil so I use MCT Oil, but you can use olive oil. I tend to pile on the spice so it's definitely done to taste. This makes the best second day meal, once the flavors have had time to sit, so I suggest making enough for lunch the next day.

Ingredients:
Peeled, deveined shrimp
Fresh cilantro
Red pepper flakes
Cayenne pepper powder (what you can handle)
Fresh limes (around 4)
Zucchini
Red bell pepper
Fresh garlic

MCT Oil or Olive Oil

First mix all ingredients (except bell pepper and zucchini) in a bowl. Chop and cook your zucchini and pepper with a tsp or two of your preferred oil. In another pan cook your shrimp, let simmer once it's cooked, it'll become a thicker liquid. Combine with the veggies and serve.

Get Your Knoshbox

I love enjoying local foods. One of my favorites in my parents home town, Fredericksburg, Texas, is Chocolat. Words can't explain my obsession with theirdivine dark chocolate salty caramel. It makes other candy pointless. But, unless you live in a small town, it isn't always easy to find those local artisans.

Luckily, there's a big world of local artisans out there and Knoshbox is doing the foot work for you. They do identify small, local artisans across the country and package them for a monthly delivery straight to your door..

In my knoshbox for February: California Harvest Sun-Dried Tomatoes from Sonoma, California; Great Bean chocolate from Austin, Texas; Clarine's Florentines chocolate and almond cookie from Berkeley, California; Two Cousins lemon pepper biscotti from Connecticut; and Sfoglini pasta from Brooklyn, New York.

I loved EVERYTHING in my box, and they were wonderfully sized portions for more than one. I haven't used the pasta and sun-dried tomatoes yet. I'm saving them for Easter to use together in this recipe.

So, go ahead, order from knoshbox, they give an amazing array of awesome local products!
